About sweet corn (yellow)
Sweet corn is at its best in the monsoon: kernels should be plump, tightly packed and release milky juice when pressed. Roast the cob over a flame with lemon and chilli salt, or boil and use the kernels in soup, sandwiches and chaat.
Sweet corn loses sweetness quickly after picking, so cook it within a day or two.
How we pick it
We choose cobs with fresh green husks, moist silk and full rows of kernels.
How to store it
Keep in the husk in the fridge and use within 1–2 days.
