About cauliflower
Winter cauliflower is at its best when the curd (the white head) is compact, creamy-white and surrounded by fresh green leaves. It works in dry sabzi, parathas, pickles and roasted dishes.
Cauliflower is sold per head. Weight varies with the harvest, typically 600–800 g each in the main season.
How we pick it
We choose heavy, compact heads with no brown spots or loose, spreading florets.
How to store it
Refrigerate unwashed, wrapped loosely in a cloth or paper bag, stem down; use within 4–5 days. Soak florets in warm salted water before cooking.
