About beetroot
Beetroot is sweet and earthy, with a colour that brightens salads, raita, cutlets and halwa. It can be eaten raw (grated), boiled, roasted or juiced. Smaller and medium beets are usually more tender than very large ones.
Beet juice stains — wear gloves or wash your hands and board soon after cutting.
How we pick it
We select firm, smooth beets with no soft spots, shrivelling or deep cracks.
How to store it
Trim any leaves, then refrigerate the roots in a bag for up to two weeks.
