About carrot
In winter we stock the deep red desi carrots prized for gajar ka halwa and kanji; in other months you will usually get orange carrots, which are crunchier and better for salads and stir-fries. Both are sweet when fresh and should snap cleanly rather than bend.
For halwa, plan on about 1 kg of carrots for 4–5 servings.
How we pick it
We pick firm, smooth carrots without cracks, soft tips or hairy roots.
How to store it
Cut off any green tops, then refrigerate in a bag or container; they keep crisp for 1–2 weeks.
