About apple
From August to early winter we stock fresh-season apples from Himachal and Kashmir; in other months the apples come from cold storage and are a little less crisp. A good apple feels heavy, snaps cleanly when bitten and has firm, unwrinkled skin.
A kilo is usually five to six medium apples.
How we pick it
We choose firm, heavy apples with tight, glossy skin and no soft spots, bruises or wrinkles.
How to store it
Refrigerate in the vegetable drawer, away from greens; apples keep crisp for 2–3 weeks. Wash just before eating.
