About fenugreek leaves
Fresh methi has small, round, bright green leaves with a pleasant bitterness that mellows when cooked. It is used in aloo methi, methi malai matar, parathas and theplas. Pick the leaves off the thick stems before washing.
Methi is a winter green and may be unavailable in summer.
How we pick it
We choose bunches with small, tender, bright leaves and remove yellow or flowering stems.
How to store it
Wrap unwashed in a paper towel and refrigerate; use within 2–3 days. Cleaned leaves can be dried in the shade to make kasuri methi.
