About mint leaves
Fresh pudina adds a cool, bright flavour to green chutney, raita, biryani, shikanji and chaas. Use only the leaves and tender tips; the thick stems are woody. One bunch is plenty for a bowl of chutney.
Crush a leaf to check: fresh mint is strongly aromatic.
How we pick it
We pick bunches with bright, unblemished leaves and no black spots or wilting.
How to store it
Stand the stems in a glass of water in the fridge, loosely covered, and change the water every two days; or wrap in a dry towel in a box.
