About spinach
Fresh palak has bright green, smooth leaves and thin, crisp stems. It cooks down a lot — one bunch makes roughly one serving of palak paneer — so order an extra bunch for saag or soups. Winter palak is the most tender and has the best flavour.
Leafy greens may carry some soil from the field; wash them well in several changes of water.
How we pick it
We pick bunches with deep green, unwilted leaves and no yellow or slimy patches.
How to store it
Remove the band, wrap unwashed leaves in a dry cloth or paper towel and refrigerate in a bag; use within 2–3 days. Wash just before cooking.
