About brinjal
Our standard brinjals are medium, long-to-round purple ones that work in most recipes. For baingan bharta, larger round brinjals char best over a flame; smaller ones are better for stuffing. Tell us in the order notes if you prefer one size.
Fresh brinjal has shiny tight skin and a green cap that is not dried out.
How we pick it
We choose glossy, heavy brinjals with fresh green caps and no brown patches or holes.
How to store it
Store in a cool place and use within 2–3 days; if your kitchen is hot, keep in the fridge vegetable drawer.
