About green chilli
These are the everyday medium-hot green chillies used in most North and South Indian cooking. Heat varies a little between batches; remove the seeds for a milder flavour. A 250 g pack lasts a typical family about two weeks.
Fresh chillies should be glossy, firm and bright green, with green stems still attached.
How we pick it
We select glossy, firm chillies with fresh green stems and remove soft or red-turning ones.
How to store it
Remove the stems, store dry in a paper-lined airtight box in the fridge; they keep for 1–2 weeks. Do not wash until you use them.
