About lady finger
Good bhindi is young and tender: the tip snaps off cleanly instead of bending. Older pods turn fibrous and sticky when cooked. Bhindi is at its best in the summer and monsoon months.
For non-sticky bhindi, wash and dry the pods completely before cutting.
How we pick it
We pick small to medium bright green pods that snap at the tip, and leave out hard or blackened ones.
How to store it
Keep dry and unwashed in a paper bag in the fridge; use within 2–3 days.
